After a first, gentle pressing, the grapes still have 10-15% juice. These grapes were macerated for seven days and then they were pressed again and more juice was removed, more concentrated. This juice was spontaneously fermented. The result is disconcerting, undisciplined, disruptive, disturbing… in a very delicious way. It’s not a movie, it’s a wine. It’s A Clockwork Orange, as life sometimes puts an agonizing pressure on us that we just try to withstand. Here, we transfer the mechanical pressure to the hides, which is a pretty healthy way of coping. Honey orange color, very exuberant nose, notes of candied orange, some quince almost hints of late harvest. Full attack, super textured in the middle of the test, greedy, but with a lot of freshness.
