In the constant search for high quality products, the first DOC Alentejo – Évora sparkling wine was produced at Adega Cartuxa, in the 2007 harvest, using the Arinto variety. This wine was obtained by the classic method, resulting in a fresh and elegant wine, which reinforces the excellence of the Cartuxa brand. Vinification: Base wine produced from Arinto grapes, rigorously selected and harvested in the ideal state of maturation for the production of a sparkling base wine. Alcoholic fermentation in stainless steel tank, with controlled temperature. Aging on fine lees for 6 months, with periodic bâtonnage. Sparkling using the classic method, in the cellars of the Cartuxa Monastery. Dégorgement after 5 years of aging in bottle.
