In the constant search for high quality products, in the 2008 harvest, the first Reserva Bruto DOC Alentejo – Évora sparkling wine was produced at Adega Cartuxa. This wine was obtained by the classic method, resulting in a fresh and elegant wine that reinforces the excellence of the Cartuxa brand. Vinification: Base wine produced from rigorously selected grapes harvested in the ideal state of maturation for the production of a sparkling wine. Fermentation at controlled temperature, carried out in French oak barrels. Aging on fine lees for 6 months with periodic batónnage. Second fermentation in bottle using the classic method, followed by aging on lees and intermediate batônnages for 6 years, in the cellars of the Cartuxa Monastery.
